Ingredients

  • 2 tsp ground cumin

  • 2 tbsp soy sauce
  • 2 tbsp brown sugar (or honey)
  • Salt & pepper to taste

For the Roasted Pineapple:

  • 2 cups fresh pineapple chunks
  • 1 tbsp butter, melted
  • 1 tbsp honey
  • Pinch of chili flakes (optional)

For Serving:

  • 3 cups cooked jasmine rice (or basmati)
  • Fresh cilantro, chopped
  • Lime wedges

🍳 Instructions

1. Prepare the Beef

  1. Heat olive oil in a large Dutch oven or pot.
  2. Season the beef with salt and pepper, then sear on all sides until browned. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and sliced chili until softened.
  4. Stir in cumin, paprika, coriander, and tomato paste; cook for 1 minute.
  5. Add crushed tomatoes, beef stock, soy sauce, and brown sugar. Mix well.
  6. Return the beef to the pot, cover, and cook:
    • Stovetop/oven: 3–4 hours on low heat until tender.
    • Slow cooker: 6–8 hours on LOW.

When done, shred the beef with two forks and mix it back into the sauce.

2. Roast the Pineapple

  1. Preheat oven to 200°C (400°F).
  2. Toss pineapple with butter, honey, and chili flakes.
  3. Roast on a baking tray for 15–20 minutes until caramelized.

3. Assemble the Bowl

  1. Place a scoop of rice in each bowl.
  2. Add shredded beef with sauce on top.
  3. Serve with roasted pineapple on the side.
  4. Garnish with chopped cilantro, fresh chili slices, and a lime wedge.
